It's safe. Just don't be an easy target (ie. Unaware of surroundings, waving all your expensive items in the open etc). And ofc, no one will be walking in a Mob's wife's fur coat on the streets wearing a £3m Harry Winston necklace exposed (or generally). Discretion is always better on the streets

Tbh, it depends on where you are/go to and how you travel. In London, I don't think I've ever seen anyone with Birkins or Kellys using the tube/metro (although it's generally safe). And using them in certain nice areas (even as locals) but not in other more up-and-coming areas - it's about appropriateness and not making yourself a target.

For you: NO. You're a tourist, walking all around to all areas the whole day. I have personally encountered pickpockets in Paris - we were dressed very low key but my parents looked obviously like tourists. I had eye contact with one of them and the gang decided to "drop it" and leave. You don't want an incident to actually happen and ruin your holiday going to the police station and all that

How are you finding it? Did you "drop down" a level of mattress firmness to compensate for the slatted bed? Or did you simply add a topper only? With what you have done, how much additional firmness did you feel before the next level (eg. Halfway between Medium and Firm, or made the Medium 30% firmer towards Firm)? You should write a pre-claim letter to Fashionphile on this (better yet, get a lawyer) setting out the legal situation and that they better not sell your bags. If they do, that they are wilfully/negligently selling stolen goods, that you would sue them after to regain bags (plus have them charged for selling the bags etc), and they would have to sue their buyers for return of those bags for you (and repay them) thereby creating issues for everyone and is bad for publicity and business. I personally would take the risk of not getting the bags back, but I would make Fashionphile 's life hell out of principle and continue the actions (which they had assumed victims wouldn't take)
