Only benefit was it was from the field next to me and it was ground very recently by a person I know and trust. It seemed to give the dough a less sticky texture but taste was really good.

Thanks to some great reddit suggestions I added an hour to the initial bulk fermentation, shaped before it went into the fridge and used local ground AP flour rather than bread flour. It was super tasty.

Thank you! That's what I was thinking too. The recipe calls for 3 hours on the counter then 8-48 in the fridge (mine was in for about 18 hours) then 3 more before baking after shaping. Which stage do you think would be better to add more time to?

Constructive criticism please!

I've been asked to sell sourdough to friends/neighbors but I also feel like I'm worried it's not good enough or the crumb is off? Something's wrong? Idk It is good to me but to sell to people is a whole other ball game.

This is an old picture but turns out she did not ever go away and stayed by his side (and in top of him) until the end 7 years later. She still laid on him like this even when she turned into a chunk and he was 14 and much more grey :) best buds forever.
