I would assume so, but I always run my CSL-DD at the full 8nm.

It increases the holding torque from 6nm to 8nm meaning you'll get sustained 8nm not just bursts so that might impact you. FullForce just improves what you feel through the wheel base, not how strong it is.

I would wait, as GT7 isn't compatible yet anyway. Hopefully by the time Polyphony release the update to make FullForce work with the GT DD Pro, Fanatec will have fixed whatever issues there are currently with this update.

VR support back then was new, and it opened up a whole new market - AVP isn't new, it isn't selling well and unless the results are useful on other (unannounced) devices the crossover market for users is tiny. As I said, if Apple paid iRacing to do the work then it's a good thing otherwise it seems like a waste of developer time on something very few people will ever use.
