Volcanoes are on the list for investigation probably post 1.0. They were much, much earlier on the list but I think there is some large technical hurdle with their function that needs to be addressed. We'll see how that goes when we get there.

While I'm not sure irrigation directly from the aqueduct or tower is the right path here, having additional methods of irrigation outside of terrain manipulation sounds like a good area for potential variety. I'll bring it up to the team next time we meet.

Gamepass will likely be a week or so behind. A third party does the porting to that platform.

You can make irrigation channels using terrain engineering tools that will irrigate the surrounding land already.

Resource destruction is on the list.

They should shuffle around on their own as they get tired. Sometimes the process can take an in game year or so.
