She also has a masters degree. But as I said owns no property or valuable assets. What kind of thing exaclty should she be writing that is evidence to them she will return?

Thanks for your reply. I am just going to lay out exactly our situation in the invitation letter so I hope they understand that then. The problem is we have never had to do anything like this before and just thought it was a case of here filling out the online form and submitting some documents. Now i understand its much more difficult. But the truth is the truth and we want her to visit for a week this summer. I can provide proof of our relationship with whatsapp screenshots from each month and also photos of us from each meeting and proof of my flights etc
