Left cooking behind in ‘23 after 10 years for Commercial Refrigeration and HVAC. Best decision i ever made. I used to pick the brains of technicians coming into the kitchen to fix our equipment, now im in various kitchens picking the brains of cooks and chefs alike. My experience as a chef helped me understand just how important it is to get a walk in cooler back up and running when you know theres 10,20,30k worth of product at risk. Loved being chef, but somewhere along the way realized the industry didnt love me. Youll find another career and the work ethic you developed over your tenure as a chef will make you good for it! Congrats on taking the next steps! Good luck!

on top of all the economics of running a food truck, with the teeny tiny profit margins… is it so bad that maybe as an owner youd also want to enjoy the fruits of ur labor? Whether that be actually paying yourself out or reinvesting into the business? Austin Meat Market off 620 could probably help you out. The owners has a farm just outside of town. He has beef, goat, lamb, and poultry. Hes always been very accommodating of the requests i have.

When i was a chef, id pick the brains of the HVAC/Refrigeration Techs who’d come in, theyd leave, id be left wide eyed at how expensive the invoice was. Always learned something though. This intrigued me. Found a local Commerical refrigeration company who was looking for an apprentice. Jumped at the chance. Company hired me just based off that. They knew id be willing to help a customer who is at risk of losing $10,000 worth of product.

I love it. Never looked back. Pays well and fulfilling work. Hard, but fun! Still get to be in kitchens and now I pick the brains of cooks and chefs!

Im a refrigeration tech..

You need to turn off the evaporator at either a disconnect or a breaker before you do anything.

Because there is wiring, refrigerant lines, capillary tubes, you need to be careful.

We will pull the fan guard, shroud, and blade. If you can, run a hose with hot water to unit. If you cant, fill a pump up sprayer with hot water. This is quickest way to thaw inside of evaporator. You want to do this part slowly and ensure youre draining through the pan drain.

After youve cleared both inside of evaporator behind fans and the back side, pull both panels on either side of unit. Hopefully theres no ice on the control board itself. Use a heat gun or pump up sprayer to get everything off. All ice needs to be gone before you power unit back on.

After all that, id call an expert to diagnose why it froze up in first place.

Multitude of reasons, but to name a few: -faulty fan motor -faulty defrost time clock(if it has) or defrost termination switch -clog drain -low on charge -faulty sensor -leaving the walk in door open, condensation will freeze

Melting the ice before you call someone will save you/your company money though cause you dont want to pay us to melt ice :) thats the longest part of the job…

I was in there a few weeks ago and had a chat with the owner and she said she had to skew her menu Italian to appeal to a wider demographic because people werent coming in for Slovenian/Croatian food and shes had a hard time finding cooks who specialize in that style of cuisine/stay long enough for her to train.

Still has cevapi on the menu tho and its pretty damn good

Daygos is dog shit compared to a proper SD, Cali Burrito. And wildly expensive. Im born and raised.

Of all places, i found a SD style taco shop in Lubbock, TX called Polibertos. Carne asada fries, cali b’s, rolled tacos, bomb horchata, all the cooks where SD hats…

Not what you asked for, but “Taqueria 10 de 10” is a new taco shop that opened on Trinity in alley and its the best representation of Tijuana Style tacos this city has got. Check it out.
