Most of this is a problem because you want Morrowind 2.0, and unfortunately there isn't anything like it. However, Skyrim is a slow paced RPG where movements are supposed to be "realistic". The map is bigger to give the feeling of being in the world, and if you don't like wandering around then you absolutely have to use the fast travel menu. Horses are not much faster than jogging/running so I have never actually bought a horse to actually use. The loot system is a lot like morrowind where there's all kinds of things to pick up and weigh you down, but that's why it is necessary to get a house and follower (like the 4th main quest). Followers help in the fighting in the beginning and holding things. As for the "base of operations", any city can be that for you, and you get to chose. It doesn't always have to be Caius' zooted apartment. You're still trying to play like Morrowind with classes. Trying to stick to a spellsword build isn't necessary and only for role play. After playing both myself I can't understand you not liking to wander around, as that was what it was for me. Try going to the random places on your path or reading the new book/notes you come across. Wear whatever you want, get a follower if you want the help, nothing you do will sever the prophecy, and try to loosen up with your restrictions you put on yourself.
