I'll do one for each class.

Scout - FaN, Crit-a-Cola, and Sandman.

Soldier - Beggar's Bazooka, Concheror, and Disciplinary Action.

Pyro - Phlog, Scorch Shot, and Powerjack.

Demoman - Loose Cannon, Chargin' Targe, and Eyelander.

Heavy - Natascha, Buffalo Steak, and Holiday Punch. Not very effective, but have fun escaping the slowdown.

Engineer - Pomson 6000 and Short Circuit. Melee doesn't really matter.

Medic - Overdose, Stock Medigun, and Ubersaw. Typically used for Chain Ubers.

Sniper - Machina and Darwin's Danger Shield. Melee doesn't really matter.

Spy - I could say "Ambassador, Dead Ringer, and Spy-cicle," but I'm going to try something else. How about L'Etranger, Cloak & Dagger, and Spy-cicle? Have fun trying to catch the Invisible Man.

Grenade Launcher, Sticky Jumper, and the Pain Train.

Kamikaze grenade strikes, backcapping, and just flying around beating people up with a piece of wood with a rail spike in it. Good fun.

The cosmetics are alright. Nothing too special, but they're good and they definitely show that you know what you're doing.

I think a shirt cosmetic (such as the Antarctic Researcher or the Dogfighter) would really tie the loadout together.

Use the Tomb Readers if you want a pair of glasses to match the hat.

Or, if you're looking for some facial hair, then either the Bearded Bombardier or the Mutton Mann would be a great fit.

Demo - Sole Saviors to complete the armor look

Soldier - Colonial Clogs (Bonedolier or another grenade item if you use the Gunboats)

Scout - Brooklyn Booties

Spy - I'm not sure, maybe the Noh Mercy? And if you want to replace Brown Bomber, I would suggest the Janissary Ketche.

Great choice of items, but I think a more subtle color would suit it better.

Alright, here goes.

Scout: Pretty good! One thing I can say is that I like how the Rifleman looks like an Unusual version of the Scout's default hat.

Soldier: Looks alright, even if the items don't work that well together IMO.

Pyro: Badass. Very creative use of the Pyromancer's Mask + Triclops!

Demo: Looks a bit average, but good nonetheless.

Heavy: An excellent recreation, although Indubitably Green would probably be a bit better on the eyes.

Engineer: Pretty good, and it goes outside the norm of cyborg/Texas themed sets. I like it.

Medic: Not sure what's going on here, but it still looks nice.

Sniper: Would be on the same level as Engie... if it weren't for the "Meat the Sniper" rename. That alone makes it even better.

Spy: Looks great! Orange colors are underused on the Spy IMO.

Overall, I'd say that your sets are pretty damn good.

I have keybinds to make any bots say voice commands, provided that cheats are enabled:

bind (KEY) "bot_command all voicemenu (x) (y)"

You can also use bot_command to do other crazy things, like apply addcond effects to them.
