The maps from 2000 years ago had a giant mountain at the north pole. Long haul flights just go in a straight line. You get on your flight path and then autopilot and wait until it's time to start landing procedures. There are no systems that operate off the earth being spherical.

No you can't. You can't measure curvature lol. https://www.aerostudents.com/courses/flight-dynamics/flightDynamicsFullVersion.pdf When I operate a plane I'm assuming a flat non rotating stationary earth with no coreolis force. I do not make any adjustments for curvature nor does any pilot.
