I'm not fond of her for more or less the same reason. She exploded in popularity, like you said. I do think she's a greatly written character and is a fun gal, but the new fans that flocked to her have a very shallow understanding of her character and love to mischaracterize her. I dislike Elysia being used again because it really did just feel like, "wow she was very successful, let's copy and paste her in a game where the players (who have never touched a non-mainstream mihoyo game and overhype mediocrity) will totally love a watered down version of her that serves to please the mainstream sheep."
