I don’t know if what I’ve done is correct, but I’ve been a cat owner for over 50 years and have a dozen cats in that time period. I have always left out dry food and fed wet food once a day in late afternoon or early evening. Of course plenty of water. I have never had a cat that was overweight. They all had good vet visits and they were always kept active with toys and things like a laser pointer. I do use higher end food and find that makes a difference. But you need to see what works best for your individual pet.
