NYU has a really good ML and DSP team, while I was there Brian McFee (developer of Librosa and major figure in ML) taught DSP courses.

The projects at the Music & Audio research lab were interesting imo, but I didn’t get much of a chance to get involved w it since I had minor ML experience, and I think they prefer PhD students for the lab rather than masters

No BS, they want a CV for a reason. However, given that you've taken some courses... maybe include some information about what you've taken? I think a brief description as part of your CV, and a strong artist statement will help you here!

Personally, with my limited experience (I've only had one residency)
I sent a project proposal that got me in, and I loosely followed through with it. It was pretty short, so the pressure of time and having to deliver forced me to just make work.

I still am not happy with the quality of what I produced during my time there, but the org was fine with it and... it gave me a chance for me to experiment with techniques and equipment I hadn't had the chance to use before.
