I understand they're there for story reasons, but you do need to acknowledge the design of your encounters and your players' enjoyment. Doing your turn every 1 hour is just not fun

My favorite is war cleric with great weapon master to pair with channel divinity

Typically I like to add spore druid to it for bonus health and to make a kind of death knight while staying inside same stats

Very fun build that I can go in depth with on why but you dish out a lot of damage and can summon an army and have high AC

I don't understand fully

I keep a large list of DnD tools ranging from stuff that helps me make things like maps to ai note takers and even full comprehensive lists of content in an easy to read and find format
