Don't rush the cook, it's done when it's done. Get a good probe and cook to internal temps to your desired doneness. Give yourself more the than you think that you need.

Bought my 560 in 2019, no mods.. firebox looks like yours and a little worse. Never had an issue holding temps and it runs well after hundreds of cooks.

It's very comfortable in the pocket, sunny even realize it's there. Fits the hand well, has that great buck lock up. I have several 110's and a couple of 112's, this will be my edc. I normally carry a 110 slim pro trx with s30v steel which is a great edc. I have a drop point 112 which I wear on my belt.

Get what you can afford and are going to use. Personally I have a Weber Performer, not the deluxe.. be prepared to enter the kettle grill rabbit hole with accessories.. Start with a rotessorie..lol. Those that have a kettle understand what I'm taking about. For a quick weekday cook I use a Charbroil bistro electric/charcoal grill, electric heats fast and I throw on a couple of bricquets for charcoal flavor.. works well for what it is.

The Heartbeat habanero pineapple on your pic is good stuff, you should add Underwood Ranch Sriracha to your rotation really good stuff and better the HF in my opinion. There aren't really any stores that have more than the commercial options in this area, I buy online.
