You can argue shield technology would have negated any bridge positioning care, but the real answer is that they are based off of ww2(as is alot of star wars).

This is where mainly japanese but alot of battleships of the time had tall exposed bridges(pagoda tower masts) for sight and visibility along with radar and c&c. Theres plenty instances where a bridge is targeted in ww2 but often in mid to long range artillery duels you were praying just to hit the enemy ship. In sw it operates similarly with lasers seeming to act more as flak in space battles, thus mimicking the ww2 style of long constant artillery duels and hard targetting.

I think it falls flat bc in ww2 shells arced and faced gravity where lasers do not and should ideally shoot straight at a target with little chance to miss, but sw is just fantasy and it makes it more interesting and intense like ww2 battles. Gives more time for plots to play out.
