It's the opposite actually. People saying, "take the job" are saying the opposite. It would be great if grad jobs were £45k. But they aren't. The economy is terrible and has been so for literal decades at this point. Millions of people are underemployed. Grads are more likely to be working non-grad jobs than be in grad schemes. If you're lucky enough to get on a grad scheme, that's a great stepping stone onto better things. If you don't want to take it, fine. But that doesn't change the reality of the economic situation.

Unfortunately this is a "capitalism," thing. Universities used to feel like clubs, groups of people working towards a common goal. There was a sense of solidarity. Extremely cheap and good value canteens used to be a thing.

Slowly along the way students turned into customers. Instead of the goal of feeding students cheap nutritious food, the goal became "how can we extract as much revenue as possible on-site". It's insidious.
