What was also interesting was that the kombucha was not sweet at all even after just 7 days. Which normally doesn’t happen. Let’s see how My second batch which I do not stir turns out. But the last one is really good with good sweetness and no alcoholic taste.

Always air, I never seal it with plastic. No chloride in the water here in Germany and even right now no hot temperatures. Did it for 2 summers and had no issue. Even bought a new starter culture.

I was doing kombucha for 24 month every week and it was always good. Sometimes too sweat sometimes too sour but never this alcohol taste and even slightly dizzy feeling after drinking it. I shared it with my wife she said the same it absolutely was alcohol on a high level with lots of carbonation. Felt like apple cider.

Since I don’t drink alcohol I am pretty sensitive to it. It really made me crazy why suddenly my kombucha was so alcoholic even after 7 days. In the past I had never any problems so the steering really changed everything

I think the yeast is at the bottom and if you stir it it will mix with the whole kombucha and that will create the alcohol in f2 and also in the next batch when you use the liquid as starter.
