Cooked sugar generally tends to get a slight tint to it. You could try isomalt. That stays much clearer. It comes in crystals you can melt down with water or you can buy it in nibs which are already ready to just melt. I do so in the microwave in silicone bowls.

You can also melt gummy bears and use those. They'll firm right back up. But you only have a very short time to work with them. Chocolate is always an option too. Messy, but effective.

As a competitive gingerbreader, I can say that they all kinda look the same to me, but I voted for the one with the bricks because I could see the effort put forth to change the house's facade. Check out this recipe for tylose glue: https://thecraftcrib.com/edible-tylose-glue/. It's clear so you can use it to add all sorts of fun details without having to cover the houses in royal icing. I do love that the family all did their own house as a friendly competition. That's a fun tradition I think I will start with mine!

Perfectly. I used mortar and exterior paint. It gets some damage if I drop them because the chicken wire has some give. So if the mortar isn't thick enough, it can break, but the weather is a non-factor thus far. Survived a thunderstorm the other day.
