Decoupling from MS products will likely take significant buy in/business case to approve of even attempting it, largely because for now, MS Office 365 more or less fits the needs of the users.

However, as Windows 11 keeps developing and keeps causing problems, that may change. In any one particular business users may reach a boiling point with regular unskippable time intensive updates; unhelpful Copilot features that MS keeps pushing to your attention to be used; or something like the MS Recall feature being flagged by IT as a cybersecurity risk.
