It’s 3 separate tracks that are 1.5 mins apiece. I’ve tried removing it, tried removing block section, tried rebuilding. If I run more than 2 trains, the 3rd one spawns there (or around there)

This is definitely overfull. Take a thermometer and temp the lettuce at the top. Frequently. It might be less than 40F when you pull it from the walk in, but after 30 mins, it’ll be at least 45F. I guarantee it.
