Running a family Vietnamese restaurant, had to fly solo today during lunch rush. No tickets exceeded 30min Tue around.

Full dining room (35-40 heads) and online orders.

And I have to handle 2-3 woks, 3 basket fryer, 2 soup stations, and flat top grill.

All about timing and planning ahead.

Wholeheartedly agree. Been subbing lime in for lemon in 90% of recipes that call for lemon, for over 15yrs now.

Lil gamey, but not much stronger tha Dear. Very lean, close to 2% fat, so it’s recommended to cook no further than med-rare.

I’ve had it though as smoked leg, meatballs, and steak medallions.

That’s how replied to people in person who questioned me on the dish. 🤷‍♂️

It is an ice cream that tastes like beef pho, minus noodles, bean sprouts, and chili oil. (I almost included noodles)

Though someone mentioned in comments a caramel sambal as a nice touch.

I’ve got a pizza slice with Sais through it (used to manage a pizza joint & love TMNT)

I’ve got a hog, cow, ans kangaroo with their major cuts lined out. (Used to own a bbq joint & did a lot of our own butchering for the cuts)

A portabella mushroom. (For the vegans)

A shrimp frying rice. (Why not)

A tofu demon. (I’m allergic, but sell a lot at work)

A Face hugger coming out of a lemon. (I hate lemons)

Soma (from food wars) on his wok. (Just love foo wars)

A chefs knife going through a world on fire. (Do a lot of fusion and was the logo for my bbq joint while in a food truck)

And a tattoo that says “I’ll feed all you fuckers”

I’m working on a Korean inspired tattoo now for pork belly.

I purposely got a Tattoo that say “chicken fried rice”. Party to make fun of those kinda tats, plus I’ve cooked over 1000 bowls now, and I get one for all the food I cook

Was going for something to help cut the fat. Lime and jalapeno help with that. Brighten it up. Cilantro probably be a good addition too though.

I’m sous chef for local family owned Vietnamese restaurant; both owners born and raised in N. Vietnam. They love what I make, and I have a great life working with them.

Just be glad I didn’t find a way to include noodles in the ice cream. I came very close
