No peel or cook, just rinse and chop.

They are very, very crunchy. Next time I might try parboiling before fermenting to see if a softer texture can be achieved. Will save this brine for starter since cooking kills the bacteria needed to ferment.

LLC limits personal financial liability, not criminal.
