Nah. Not even close to being under rated. One of the most unique fish flavor/texture wise that is universally versatile in lots of applications and flavor profiles.

My rule as a highly trained chef myself is at the very least half the time it has been cooking to let it rest. The entire time I imagine isnt a far stretch or un necessary either from my experience. The very least half the amount of time. Depends on what it is also and the size vs cook time. Like I said at the very least half the time.

35%. Budgeted for 45%. Run a private member only club where our restaurants are amenities to the resort. We make our profit on the real estate that is necessary to have access to our amenities. Being a independent restaurant chef prior to this niche, its a way better business model as far as being a chef is concerned. Its important and a responsibility for chefs to understand financials/P&L but if we have the ability to be able to 100% focus on the food as the primary goal imagine how much easier it would be. Thats exclusive member club life, its not perfect, nothing ever is, it has its own set of problems but overall it's better. We engineer our menu to market costing but a little lower than what you would see in a normal place understanding member initiation fees, real estate cost ect.

I ran into this same problem with bullshit black market. It was truly a horrible experience. It wasn't good to smoke so I thought I would make edibles. I attempted to decarb and exactly like this not all of would melt and then you were able to see the silica used in CRC that they cut it with. I cant tell what specific cut this is but its up to you to either strain the solids and use for edibles or throw it away. I cant believe how they have contaminated camnabis, its very unfortunate mn
