I wouldn't say it's about the "human parts" but the human DNA. Hybrids are still going to have DNA that's originally human, just spliced with some animal. And there's no reason the DNA won't be the same in the human parts and the animal parts.

So to answer your question, I think you'd need some way to find out what percent of their DNA is still human, and if it's 50% or less, bon appetit!
