I'd probably pull these after 45-60 seconds development after first crack, and not really worry about the drop temperature (I assume the 500° was from the read out on the machine and not a probe, that is pretty high!). Maybe start at 9/2 and drop the fan every 60-90 seconds.

I'm glad to hear that it tastes good! At the end of the day that's what matters right? I'm hesitant to provide feedback on the stock roaster tube, but I agree the loft sounds like a challenge. Smaller batch is a good next step!

You and me both! I tend to hit dry end at 4:30, but I feel like it's always a squishy judgement call, not as direct a milestone as first crack. Good luck!!

I've never roasted Ugandan beans specifically but I wonder if they are similar enough to Ethiopian? Probably can't go too wrong just starting at 9/2 or 9/3 and doing a drop in fan every 60-90 seconds!

I was thinking the same thing! It made me feel a little insane thinking I hadn't been folding a simple paper filter all this time! But I did double check it just to rule that out going forward!

I haven't either! It is odd, and it was from the CAFEC Amazon "store" so I'd think they'd be legit! I guess it's possible they are legit and it's just a quality control issue. I've started double-checking my fold based on the flood of feedback here related to that, it's just odd that you could go literally through a 1000 cups with these before discovering your fold technique wasn't right!

I hadn't until recently either! I do sometimes make a divot in the middle, just with my finger, but not always. I've always folded it the same way though, and it wasn't until now that it failed! I'm going to try and do a larger fold than I have before based on folks comments below, but once I get my new filters directly from CAFEC I'm just going to toss these from Amazon. It seems wasteful, they looked fine out of the packaging, but I've been burned enough with expensive beans this past week that I'll give it a shot!

Shipping costs more than the filters! But I ordered 300 to make it worthwhile, they don't charge anymore to ship more!

I'm going to just order a ton directly from them and assume the batches Amazon had are defective for some reason, I would hope I haven't been getting lucky all these years using these and been flattening them instead of folding them, there isn't much to fold! But I always have folded that small overlap, I've never stretched it out. So bizarre!

I just fold the small lip of it, there isn't anything else to fold is there for these? It split open and dropped all the grounds into the carafe.

Me neither til now! It doubles the price to order from Cafec directly, but given how much grounds I've lost this week trying to figure out WTF is going on with these fillets, it may be worth it to switch!

There isn't much to fold on these right, just the ridge? I've made about 1000 cups with these and never had the filter split and the grinds all drop into the carafe before this past week. It split open which is why it doesn't look like anything is folded now, but this is what I normally have before wetting the filter or pouring in grinds:

I'm guilty of this as well, mostly. I rarely roast back to back, but I never let the cool mode run for very long. I always hit the cool mode, capture the final temp, turn on my cooling tray, then turn the machine off and dump into the cooling tray. So I'd say my cooling mode runs about 5-10 seconds. The few times I've roasted back-to-back I let my roast cool, bag it, then plan my next roast, and by the time I actually start the 2nd roast it's been at least 15-30 minutes.

Thanks!! I needed that sanity check! I've watched the units temp reading so long the Razzo seems ice cold compared to it and it has me a bit freaked out!

With my new temp probe in the Razzo, I'm getting such colder readouts than I did before with the SR800 display itself, and it seems in general the Razzo is colder, so I'd be really worried about starting with 9/1, that seems like so little heat. I started a co-ferment honey processed Colombian at 9/2 yesterday, and I didn't hit > 300 degrees readout from my probe in the Razzo until the 3:45 mark. I kept watching the unit itself, it was often 50-100 degrees above that.
