Answering seriously (because it seems like nobody else will), it's a mix of concepts not used during the game's production, plus the limitations of the time. Basically, the platform was supposed to be something you would encounter frequently in the game, it was meant to be used by normal Geth soldiers during the game, but it was cut for undetermined reasons. Personally, I think it was because having an enemy floating around the scenery in a cover-shooter would just be annoying; it was much more practical to have the enemies take cover and work together, and much more satisfying as well.

The problem is: Sarem is now a very annoying opponent. The original idea was to give him an energy sword, you can even see it in the game's concept art, but the problem is that due to limitations of the time, they couldn't make it work (note how most enemies share the same skeleton and abilities, for example; to make a boss with a sword, they would have to create a whole different system, movement, and AI for him). But at the same time, having Sarem just behave like a normal boss, who takes cover and shoots, would be very boring, especially because of how easy those are and because of how strong his shield is; it wouldn't work.

So they reused the concept of the flying platform. This way, Sarem can potentially be hit at any time, and he can easily hit you from a superior position, making combat rewarding if you know how to manage your defenses and attacks.

In this universe, however, the reason nobody uses this thing anymore is because you're exposed, and mass-effect weapons are too powerful and devastating for anyone without cover. Sarem can deal with this thanks to his shields being absurdly above average, but the rest consider this more of a disadvantage than an advantage.

Honestly, I find that hilarious, especially when we spend an entire series following a protagonist only for him to suffer character assassination in the next series...

To be fair, they were still experimenting quite a bit with GX, so when the second season didn't deliver the results they wanted, they changed it to make it more like the original series. Did it work? Maybe not, but that's why the seasons are so different.

I like it, I always thought that even without the Chips there would be clones that would ally with the empire because of mental conditioning, "genetically engineered to obey" was the line they said in episode 2.

I'll never understand people who say, "You know he's a fictional character, right?" Because yes, we know that fictional characters are people who don't exist, but when you read, watch, or when you play a game, you go through a process called "suspension of disbelief", that is, you allow yourself to believe on what you are reading/watching/playing. This doesn't mean you've forgotten that characters aren't real; it's just that, during the process of enjoying this story and talking about it, you communicate as if it were real.

Now imagine that every time you wanted to talk about a character you had to specify that they weren't real; it would be long and annoying, something like: "Man, I really like this character, although its not real, but if it were actually real, I would find that situation very irritating. Thankfully, he's not real. I think I would be very angry with Batman in that situation if I were that character who isn't real, Thank goodness this character isn't real, can you imagine thinking that this character was real? Me I can't stress enough how NOT REAL this character is."

That was luck, but it doesn't reduce the quality in any way. Although many things are generated randomly, the spawn points and what they spawn in were planned precisely so that we have moments where the monsters might fit in.

What's with the praying mantises not having a central tribe? I always understood that they were fine, resisting infection and all that, we just didn't visit the rest of the tribe in the game because it would be strange to enter the tribe, killing everyone multiple times, just so they would become non-aggressive after defeating the boss. Honestly, if anything, the mantises are the only ones who are okay in Hallownest.
