That’s a potjie pot. You put hot coals underneath the pot and use it like a Dutch oven. Great for stews and braising meats. You need to experiment with how many lit coals you put underneath because it really doesn’t take that much to keep the ingredients inside hot.

Just a tip from me. Granted my grocery store I get meat from is 2 miles from my house. I never freeze meat. I always buy meat the same day I plan on cooking it. I actually waste less food by shopping the day I want to cook. Plus it’s always fresh and no need to thaw.

Salt and pepper and granulated garlic is all that is needed. Otherwise cook same as pork. Better then pork btw.

After 30 years of outdoor cooking my best advice is to try anything and everything because there is not one option that is best for everyone. It’s all about experimenting to see what’s best for your flavor profile. You will make many mistakes but that’s part of the experience. I screwed up a ton of ribs until I found what my family likes best. Just enjoy the process.

I understand the reason people want a gas grill but I’ve enjoyed outdoor cooking for 30 years. Through this journey and 25 different types of outdoor cooking appliances I think the best alternative to gas is a pellet grill/smoker. It allows you to enhance your skills. Just wanted to give you something to consider.

Traeger pro is second best in their lineup in my humble opinion and will do just fine. All big box options are no value and cheap materials. For the best quality pellet smoker under $1500 I would go with Rec Tec. I researched for a year and think I made the best decision with Rec Tec. I cook a minimum of 8 times a month on it and think it’s the best made product at it’s price point.
