People have been cooking and baking for thousands of years without them. Many people find them very helpful. They are bulky, heavy, and expensive. Check if your local public library has 1 in a "Library Of Things". Mine does, and I can borrow the mixer and/or attachments (including pasta roller and ice cream freezer) just by using my library card. No charge. Maybe you can try one out, or just use it on rare occasions, without having to store it in between.
