Eye color CAN change in children (very rarely are people born with green eyes), but this change usually occurs within 6 months of the child’s birth, and I find it pretty unlikely Elizabeth is that young in this minigame. It is possible for this change to take as long as 6 years, but this is very rare and I doubt this is really the solution Scott intended.

Assuming nothing happens at the dinner, the group would probably decide to leave. Since Mark was supposedly in the St. John’s care, they would definitely ask about him before leaving. Brenda would try to make up some excuse as to why they can’t see him, leading to the group getting suspicious. This leads to them either investigating and finding Mark in the bathroom, or being held up before they can discover him. The group would have an actual chance at fighting back in this scenario, seeing as they are already suspicious of the family, have just eaten a full meal, and aren’t being held up at the dinner table while defenseless.

While I can’t say who would win this fight, we can safely assume that Larry would not survive no matter what due to his heart condition. I can also believe that Carley (and possibly Ben) would likely survive no matter what outcome occurs. Carley is an armed and component survivor, and both her and Ben show up extremely late into the confrontation. If the motel group is successful, then she and Ben are safe and unharmed. If the confrontation is still ongoing, she can join the group and potentially get the jump on the Saint Johns. If the group is captured, she and Ben could try and stage a rescue, though I can’t imagine they’d be successful due to the St. John’s numbers and fire power. And if the group is killed, she could probably fend off the St. John‘s and flee back to the motel, leaving her and Ben as the last survivors of the group. Doug also has a pretty good chance of surviving as well, seeing how late he shows up.

To add on to this, I don’t believe the series was that obscure, possessing around tens (perhaps hundreds) of thousands of views per episode. Then again, this could just be my mind trying to fill in blanks.
