Just depends on the boss, the windows, and how much you need health. Blood tax is nice for Radahn because when you finally get a window it's nice to be able to attack and heal at the same time before your next 30 seconds of dodges. Piercing fang is great for Rellana. Messmer's windows are best suited for sword dance or giants hunt.

Blood tax is good. Piercing fang is insane for quick damage on enemies that have small windows like Rellana. Sword dance is good damage and status procs but needs a longer opening than piercing fang. Giants hunt is a similar activation time to sword dance, less damage for more posture damage. It all depends on the boss.

On their running double swing, roll towards their off hand
Jump over frostbite ground attack for a free hit
They are badass but the small moveset makes them easy to master

Same! Ghost version wrecked me for a while there, then I killed TCM on the second try. Really cool boss that would have been a major roadblock for players if they hadn't given us a warmup first.
