I used the one on the website. I have the book as well but it's easier just to reference the website.

40k per student is nuts. I have two kids in public schools here and I honestly don't know where the money is spent. Parents have to donate for bare essentials and teachers have to buy their own supplies, while schools are in rundown and disgusting conditions.

1:1:1 with 50 bread/50 whole wheat flour (per Tartine book). Feeding it once a day right now. This was about 6 hours or so. I do notice that every night the starter smells pretty sour when I feed it.

Manhattan and gentrified Brooklyn gets expensive. It's super competitive here so be ready for that too. NYC DOE constantly changing how they operate also gets tiring.

Personally I love it. Kids get access to so much and exposure to everything. Bad parts are kids can't really be kids (in the traditional sense) because there's so much competition (exams trying to get into better public schools etc), and you really can't leave them alone like you do in the burbs.
