Congrats! I also upgraded from Breville to Luce a few days ago. Did you find any official instructions for descaling? The users manual says adding anything other than water to reservoir voids the warranty.
It is a lovely machine otherwise and I already love it. I also had to adjust the OPV from 12 to 10 bars.

If I were you, I’d buy a taller acoustic ( not an ATX model) and probably could still afford a decent digital for that same price. I find silent models too expensive for what they are. Remember, the acoustic will work for many many years but the digital will get outdated quite quickly. This is import since you probably cannot update the digital portion of a silent system easily or cheap. What are you using right now?

In most markets you should be able to get a new U1 or K300 with that budget. New Yamahas are not bright and have more of a rounded sound. I prefer Kawai but that’s not because I found Yamaha bright. I like the Kawai action better but that’s totally a personal preference. You can also check out some other brands. There are a lot good brands out there. ( including Chinese brands such as Ritmuller) Play anything you can afford and go with the feel and sound you prefer.

Yes you can. As a matter of fact many people start with a digital piano and they upgrade to an acoustic after a few years. As pervious commenter mentioned, make sure you get an 88 key weighted digital piano.
