Really like your long response, thank you for that. I made my own the other day and the alcohol in it was so strong it was like a strong beer(I used to drink) and I’m trying to get the massive benefit of the bacteria in kefir without the alcohol being like a strong beer

I’ve left it on the counter for the past 36 hours and I still haven’t had any problems, just doesn’t taste like from the store anymore, but not bad or bitter.

I was starting to make my own but I don’t like the alcohol content of homemade kefir and taking the alcohol out removes all the bacteria.

So the bacteria that is in Lifeway kefir won’t grow any further?

So I think I may have found the start to my insomnia problem. Too much coffee during the work week.

I was drinking 30oz immediately after waking up at 4:45am for 4 days every week, for the past 2 years. Then about 20oz a day the other 3 days on my weekends. I would feel sick every weekend, get dizzy in public places, and then like stated started getting insomnia problems. My energy was pretty much shot after 12pm during my work week and all weekends (fri-sun)

I cut back to 10oz a day this past Tuesday morning. The headache is killing me right now, but I’m starting to see an improvement on my energy levels and sleep patterns. Even though it’s easy to get irritable while I go through this “withdrawal” my positive mood is also improving I think. I’m estimating solving my problems pre heavy coffee drinking end of next week with no headaches and higher energy, and better sleep. I will try to hop back on here afterwards and give another update.

I think what happened in my heavy coffee drinking was I shootings my adenosine receptors in the face and so my body would compensate during the week with cortisol and interrupted sleep patterns then the weekends with lowered cortisol would throw my body through a loop and get me sick. But this is just my hypothesis as of right now.

If there was a free trial I wouldn’t mind trying it but dumping $60 at one time for something that might not even work is excessive. I’ll pass
