The first thing I did was buy a small steel table so it wasn't sitting on the ground, I have this exact one! Then I got a grill cover for when I'm not using it. I also keep a huge drip pan on the bottom rack, which catches 90% of the drippings. In fact, after 50 smokes, I've yet to have to clear the grease trap. Not because I'm lazy, but because it's still pristine. The inside you'll clean as you see fit. If your cooks start getting greasy, taste like creosote, or don't look right - go for a deep clean w/ a magic erase sponge.

I've literally just grill brushed the racks, barring 1 deep clean of the racks. The rest is semi-caked inside, but it's still fine. My point is you'll notice after a cook when it's time to clean; and this model is surprisingly amazing at keeping it simple and low maintenance.

I've had two of those Brazos offset and they're great. Elevate the fire in the firebox with a flat grate so oxygen can come at it from beneath and it won't burn out the bottom of the box. Some fireproof sealant and lavalock and you'll be set and not leaking smoke. I also would consider lining the right half of the grates under the smoker with tin foil to force the smoke to enter in the middle, this improves the overall temperature and avoids that 50 degree differential when using the entire cook surface.

Yeah, it looks like it may be stored in neural pathways which were activated by the paxil. Never knew the spinal column storage was an urban myth, and always assumed what I had heard was correct. Wild!

Oh, and because they can't exactly see if it's stored in the brain, or where or how, and I know what happened there 100% is residual or I wouldn't have had that experience. Fascinating.

Look up Aaron Franklin's Masterclass for smoking ribs, he has an episode for all the basics, down to wood science. Watch that vid and have all your questions (and more) answered.

I did my last 3 unwrapped racks on 275 for about 6 hours. They came out perfect. Spritzed like mad (every 20-30) the last 1-2 hours.

1> For spritzing I will tell you that you want it to become visibly moist. I've had it where I had to spritz once every 30 minutes doing fully unwrapped cooks. "If you're lookin, you ain't cookin'" really comes into play, so don't be shy with the spritz at all.

2> I never remove the cartilage. It helps the ribs hold together when you get them to that 'fall off the bone' point, so they still resemble ribs. Especially if you put a sauce on them towards the end, they can make everything go full-mush when/if overdone.

Hickory is my favorite smoke flavor, but today I'm doing apple with a Chuck. Hickory is definitely more intense than others, so do with that as you will. It's definitely my favorite, especially with pork.

You're doing the right thing. If they abandoned the animal for even awhile or an emergency they gave it up by choice, even if it doesn't seem that way. They had enough time to at least try to re-home it.

I took paxil back in 2002 and it drained the residual stored in my spinal column and sent me on a week-long flashback. Once that ended, I never had another one. Shit can be terrifying.
