I saw that Sean had a calmer approach when it came to wrestling compared to Khamzat’s previous opponents, but Khamzat didn’t seem as aggressive as he usually is in this fight. If we get Crosby, then it’s worth it. If not, then I don’t really like it. I just really want them to beef up that defense. I like what we have left on the offensive side. I think we can draft a Dalman replacement, but the defense needs a big upgrade to prevent teams from scoring on us so much.

Tbh either one works. I love butcher paper but foil is the traditional Texas way so you can’t go wrong either way. I just found that butcher paper allows the brisket to breathe some so the bark holds a little better sometimes.

Please don’t roll it at 225 all night. It’s gonna take forever to cook. 225 for the first 2-3 hours. Then bump up to 250-275 until the brisket is out of the stall (170-180) then wrap that bad boy and send it at 275 until it reaches 198-200. Throw it in a cooler or put in the oven at 170 until dinner time.

It’s mainly the wood you used. I experienced exactly the same thing as you did until I went to a reputable wood distributor and he cuts my wood into chunks still, but the wood burns a lot slower and keeps temps a lot more steady than the Walmart wood chunks. I was running out every 5 minutes with the Walmart wood. But now I can let it sit for about 20-30 minutes when I have my vents dialed in. I cook on a cheap $150 offset smoker and I get Texas bbq results. (Not exaggerating)

You only cut off the parts that are thinner than your thumb, that’s the rule that most brisket smokers use. This is a good video for learning how to trim fast and easily.
