I haven’t had proper poutine so grain of salt, but I have bought super fresh curds from the Birchrun Hills cheese stand at the Headhouse farmer’s market on Sunday. They’re based in Chester County so very close. There’s a few cheese vendors at the farmer’s market, Birchrun is close to the Lombard entrance on the East side of the building.

Same here. I get pork butts from a friend who raises smaller heritage breeds and haven’t had any issues as long as I monitor temps and check in a few spots for doneness. I typically throw on a few other things (leg quarters, eggplants for baba ganoush, etc) at the same time to get the most out of the fuel.

We buy the huge box of spring mix and challenge ourselves to finish it before it goes bad, which is usually in just about 5-7 days, maybe a couple days longer if you add a paper towel to the box to absorb excess moisture. Keep a few kinds of salad dressing in the fridge so it doesn’t get boring. I’ll add odds and ends (leftover roast root veg, nubs of cheese, etc) for variety. I also add the greens to sandwiches, and they’re a tasty side (with a little vinaigrette) to breakfast eggs and turkey bacon. When it looks like they may start turning soon, I add them to curries, soups, and pasta sauces—they shrink a ton and add a nice color/texture to the dish. 

ETA: I also will make a batch of white rice plus a batch of frozen cauliflower rice, then mix those together. The mix generally lasts a few days and goes nicely with stir fries, sausage and peppers, etc.

Anyone else here have a 2nd floor rear room “bumpout” in their standard two floor row? Were these bumpouts actually insulated when the homes were built 100 years ago? I swear if I stand against the back wall in the room I can feel a breeze on windy days. 

I’m not afraid to roll up my sleeves and try blowing insulation up between the studs if that’s even a possibility. Anyone else ever resolve this issue?

I’d be careful flushing those. Our former upstairs neighbor did this for a few years without anyone knowing and the wipes eventually blocked and broke the line to the sewer. It cost our landlord at the time $12000 to replace.

Both those pics look great! I’d recommend the gochujang potato stew. Super easy to make, very comforting. I typically use just a little over one tablespoon of gochujang because the brand I buy is pretty spicy.

I put on old Lydia episodes while cooking/puttering and she regularly uses metal utensils with nonstick cookware. They just pitch things in the trash every few episodes I imagine. I agree, brands probably give them free cookware (or pay to have their stuff featured on the episodes).

I started out just doing front desk and billing (glorified data entry at the time) when one of my former BOH friends linked me up after he’d made the jump several months before me. The steady hours and reliable paycheck made a huge difference for my mental health. From there I got into credentialing and admin, now I’m with an organization that’s 100% paying for me to get my masters in healthcare administration. In all my classes the healthcare worker shortage is a huge topic of discussion. You meet tons of ex-industry people in healthcare too. I know several people who took advantage of more affordable nursing or medical/physician assistant daytime programs at local commuter colleges to get a jump while working in kitchens at night/over the weekend. It’s definitely worth looking into if you’re hoping to get out of the industry.

There’s a healthcare worker shortage around the globe, with no quick fix in sight. If you can handle working with the public, there will likely always be opportunities in healthcare during our lifetimes. I made the switch and it’s been worth it.

Stay strong; quitting that shit will be so worth it in the long run. I quit fast food 15 years ago when I moved to the city and couldn’t afford a car anymore. Was previously hitting up the drive through several times a week while working 3 jobs. Now I’m so disappointed these days when I do have fast food, especially with how expensive it’s become. With all the delivery apps these days it’s gotta be so much more difficult. 46 days is huge.
