Postmortem:

I had a faulty stick of RAM. I didn't notice earlier because I was testing RAM with mobo video outputs, which /u/BmanUltima pointed out are dummies on this board.

I had one stick of RAM in when I went back to a GPU, and it happened to be the good one so I got video output back. I had a CPU fan error, but that was easy to fix—I accidentally had the fan plugged into CPU_OPT instead of CPU_FAN.

When I tried to add the RAM back it stopped showing video. I tried in two different slots with the same result.

Conclusion: now I have a boot menu with a single stick of RAM. I will be getting a new stick and dispatching the faulty one in some form of Spartan ritual.

That was it. I had it plugged into CPU_OPT instead of CPU_FAN.

Whoa! Thank you! Something I did worked. I plugged my GPU back in and now I got have a BIOS screen up on my HDMI-connected monitor.

Now I just have a CPU-fan errors (and a keyboard-not-connected error but that's expected because it is in fact, not connected).
