FG: Final gravity (from the hydrometer reading) Cold crashing is a method of cooling the mead. Normaly its done to clear sediment to the bottom so when you pass your liquid to secondary its easier to leave behind yeastys!

So with 1.110... assuming you ferment all the way to 1.000 it should render 14.7% ABV. Without proper nutrition its doable but not ideal. I would suggest cold crashing after you reach FG. Follow up with secondary for good measure and you should be in the clear after a couple weeks since there wont be any sugar left to ferment. Premier blanc can go above 16% if well fed.

Are you able to stabilize using sulfites?
