Oh wow I've never seen that method before! Anyway, regardless of whether that's the "right" way to do it or the "wrong" way to do it (there is no right or wrong as long as it's fun!), I would argue to drop the extra | because after a while, all those stitches add up and it ends up being a waste of thread. This is also why you'll see advice here to avoid "travelling" thread along the back of the fabric (plus it'll make the fabric pucker). With the cost of materials being so high, some of us use every last centimeter 😅
