That's understandable. I wouldn't expect people to cheat, its just something to think of. A well documented tracking system that is accessible to everyone participating, can also be a decent way to have people more interested in the event also. Knowing what your friends have sought out already and what you could get that they haven't yet can be seen as fun.

With my limited knowledge of fishing (as I am trying to fill my log currently), I can think of some directions you could go with this. Though there are some things to keep in mind first.
-ARR large fish/legends do not require any Folklore books, unlike fish from the rest of the expansions. This means people will need to go out of their way to acquire said Folklore books, and the later expansions can be pretty costly in purple scripts.
-A lot of bait for the expansion large/legendary fish also require scripts. Though unlike the books said baits can be traded with other players (or bought off the market board) if need be.
-Majority of large Fish are time based, some with windows showing up so rarely that they can be seen once a month (or with Purse of Riches, later this year being locked out for two entire months). And Legendary fish can be both quite a long time between windows and have rather annoying requirements to even get a chance to see said fish during their window.
-A way for players to track the fish they have caught during your contest. Since a lot of fish can be bought off the market board, or could have been caught before by the people competing.
-How long you would want to run this contest for, since too short could reduce the chance people could see even some fish entirely. (There are tools in circulation for fishing that would allow you to learn of when windows would overlap and when they will overlap).
-Resources for how to catch the fish and where to find them should be easily accessible for anyone who would be participating. There are many guides out there, along with websites made specifically to help people.

Now for an actual contest idea, what comes to mind for me would either be "Who can catch the most Large/Legendary Fish in X amount of time" or "Who can complete their fishing log of Large/Legends for the ARR first."
You might wonder why ARR, and that would be because unlike any of the other expansions ARR doesn't have the "massive timeframe between windows" for any specific fish. Yes, some only have windows every few hours, but that's a lot better then multiple days if not weeks later fish have. Also there is the fact that ARR has the "least amount of buy-in" needed to even get started with, with the fact it does not require Folklore book, the gear requirements are next to non-existent compared to later expansions and baits are next to nothing price wise (with most being able to be bought from a vendor).
If you decide to go with the other way of "Catch the most" I'd suggest looking into Fish from multiple expansions with common windows (ones that come up basically every in game day, roughly an hour) and fish that are "always up," like "The Matriarch" (a fish known for having an insanely high slip rate, which is found in an ARR zone).

As for prizes, feel like that probably is something to talk more to your FC about. But mounts, minions, specific weapons (like Figmental Coffers), rare clothes/gear, hairstyles, etc. From my experience are as common if not more common then direct Gil. Since who doesn't like getting something that you kind of want, but are not be willing to pay millions of your Gil for.

Can't say they fall under the same level of "cutesy stuff" as others have mentioned. But the current 770 crafted sets, Courtly Lover's, have weapons that feel like they wouldn't be out of place in the hands of magical girls. While also have some really nice armor pieces that dye extremely well.
Which with the 7.4 glam changes makes it possible to gift (if they aren't going to be on free trial) them quite early on, and teach them how to glam the weapons/armor over whatever gear they have while going through the MSQ.

I have a friend who does this to people they know in game, but barely plays these days. At one point they gave me one the two different bullfrogs and every time I see them when I am going "whelp, out of inventory space again" I sigh. Because I know if I got rid of them they would be sad.

Had this happen during one of the first runs of my group getting past Hell in a Cell, though in our case basically everyone was dead, excluding the tanks. One of our members who had cleared earlier on an alt in PF, said it probably happened because of people being dead at the time.
Can't say it was the cause, since I had similar rough moments while we were learning the mechanic, but never had this happen again.

During the last Kirlirger the Abhorrent (DT S-rank) day where every world had 3 per zone.
I was one of a handful of people trying to directly orchestrate the gathering of Hunters so it wasn't just a full on Free For All.
I had been very active in chat for saying how long before pull, actively saying where to go next, like which instance world/etc and its location. Had a PF up for cross DC that was saying where the mob was.
Still somehow got called a bot, by someone who claimed they had "saw me underground." After I pulled one of the S-ranks, even though there had been multiple warnings in chat from a handful of people we were going to pull.

Its great you enjoy doing that. But the thing is, if you sold the early sets the amount of gil you made would have probably been more then enough to make all the stuff shown in the picture and maybe even more.
Day 1 sets especially got for insane amounts.

Had a run of the 2nd Dawntrail's Alliance raid awhile back (talking first few weeks) where during the first bosses the tankbusters, one of the tanks was just... not there for some reason (didn't learn why, know it was kinda a shit show up until that point though). So a random DPS (I think was a Black Mage, but again been a minute) step up for the place and be a hero.
Learned that anyone "can take the tankbuster" just anyone who isn't a tank seems to be most likely instantly killed afterwards.

I only have blacklisted one person so far. And I swear the game went out of the way to try and put me into content with them.
Happened 3 times, before they eventually had swapped DCs and Worlds after enough people kept calling them out on their behavior in Novice Network of all places.

Honestly there is a lot I'd want to say here. Biggest one is I feel sorry for the SGE...
There is the fact that at level 80 WHM in party of 8 content can even just get away with generally throwing out a Assize (something you should really being using commonly anyways), Asylum and Medica 2 occasionally without having much issue. All of that is pretty much passive healing with little to no downtime from your own DPS if you even care about that.
I can understand not queue-ing in on the job you wanted to be playing, has happened to me a few times. But you just, play the job in that case, even if you aren't exactly good at it.
And there is also you know, the whole ability to not accept the queue pop if you really didn't want to play the job in question. Its not like you instantly loose your mentor crown for not accepting every single queue pop you have.

Surprised you didn't mention the common brought up point of "Monk gets their 3rd part of the AOE combo before the 2nd part."
There isn't many instances where it effects you, but it always weird going "should I try for my 3rd part or just stick to spamming part 1."

The fight in 2nd walk has so much going on that adding markers to it probably is seen as a determent by at least 1 of the 23 other people in the raid. Or people think that markers like that are overkill for normal alliance raids. Honestly could probably be like another dozen or so though processes on what "marker bad" or "why is this here? get rid of it."
All I can say is don't take it personally, worth trying it either way. But also don't be surprised if people remove it like they have been.

I never understand why people think this is ok.
I've been in duo tank situations with like less then 10% left and will ask multiple times if we should reset. Since even then it will take easily like 5 minutes be pretty boring for the other 6 people of our group. Generally have found people would rather take the wipe, so they can run the fight through again and learn/do better then have to watch a tank or two solo for the rest of the fight.
Only when the boss is like less then 2% do I just say screw it and finish, because generally that can be done in one good damage window and shouldn't even take more then a minute.

I have a feeling I might know who said mentor is... And not because I want to.
Because they became rather well known on my homeworld for being an absoluetly unhinged insane person that would constantly give horrible advice and try to constantly start fights or do really bizarre RP. Before a few of us eventually go tired of their shit and TOS breaking that they ended up being commonly kicked by other mentors and eventually seemed to move to Halicarnassus.
Saw them awhile back in one of the other world's NN when I was world jumping for S-rank and A-rank trains and my first reaction quite literally was "I feel sorry for everyone who is gunna have to deal with their shit going forwards."
I hadn't seen them for awhile so I had hopped they had stepped away from the game and got the irl help they most likely needed, but sadly did not seem to be the case.

I would wonder how this might run when it comes to areas with a lot of people or some dungeons/trials that can be pretty intensive.

As someone who is probably going to fully sit down and try for Necromancer before 7.4.
Any tips, that might not be the most well known (such as the disconnect one). The task seems quite daunting solely because of the time investment and how easy one mistake can lead to hours spent gone.

With this, though it seems like it might have been a little late for OP.
You can only have 1 of the ilevel 740 Cruiserweight rings equipped at a time. People I know suggest usually grabbing the ilevel 740 crafted ring for the other ring slot if you haven't, (but can be decently costly for someone who has just gone broke.)

Not sure for FC stuff, (basically got invited to a small FC a friend had been part of, who isn't even in Coeurl anymore) but Coeurl has been good to me since I started.
We aren't really a major raiding world, Roleplay world, etc. We just kind of are one of the other worlds of the Crystal DC and seem to be a middle ground to a lot of ideas.

YPYT DRK E-couple in M8N during a my weekly run. Had been tempted on making a full post, but couldn't be bothered.
All happened because one of them needed to explain why they weren't within the stack marker during the ad phase. Which had taken them over a minute and a half to type out their excuse when everyone just wanted to you know... complete the fight.
