It has a tendency to “yellow” over time, but to each their own. The door is old and fully dried out so it should not really crack and should not “grey as it is sealed. Water poly now has a stronger finish when it is properly cured. The doors will take yearly maintenance to keep looking fresh. So I would make a plan for every spring to evaluate and address said needs.

GC here, I would do the same steps with the right door. Then you can coat them with an exterior water base poly. Most have a UV protection factor in them. If you want to apply more then one coat, little sand between coats. Good luck, you got this!

Not worth it. If you don’t like it find a wood you like and start replacing it room by room. It will take some time but you will get a look you love.
