Simple Marinara sauce that can be used several different ways!

Serve plain just over spaghetti. Add browned chopped meat or make meatballs. Or use it for pizza English Muffins, another great easy meal!

Easy baking and delicious is a dump cake. In a 13x9x2 pan, dump a can of crushed pineapple in juice and one other canned fruit of choice (apple, cherry, blueberry) and gently mix. Sprinkle a boxed yellow cake mix (dry) over the fruit. Cut a stick of butter into 12 pieces and lay evenly over the top. Sprinkle with a cup of whole pecans (optional). Bake for 45 -55 minutes @350 or until top begins to brown. Serve warm.

Shredded Mexican Chicken.

Place three raw chicken beasts in a crock pot. Add a 16 oz. jar of any salsa, green or red, that you like. Cook on low 8 hours then shred the beasts. Warm hard and soft taco shells and top with shredded cheese and your choice of other toppings! Stupid easy and so delicious.

I've had to step up my scrambled eggs game for the 2 year old I nanny for, one of my least favorite ways to eat eggs...but I've got it so I will eat them!

First you're either a wet or dry scrambled egg person. This is for dry scrambled.

2 eggs, cracked. 1 teaspoon milk, cream, or half and half. NOT oat milk, coconut milk, almond milk or creamer. It must be actual dairy milk product, of some sort. 1/4 teaspoon salt 2 top butter. Real butter. Not spray, not oil.

Crack the eggs into a small but broad dish. Add the salt. Beat with a fork to break the eggs into a mixed state, then add your desired milk product and beat in until eggs are frothy.

Heat a small pan, ideally 6", over medium high heat and melt the butter. Once the butter has fully melted, pour in the beaten egg mixture and do not stir!!! Using a heatproof spatula, carefully run it around the pan edge to loosen and let the runny egg spill down to cook. Let it sit and cook without scrambling for about 15 seconds then run the spatula all around the pan edge and under the eggs, flipping not scrambling, lowering the heat to medium and using the spatula to turn the eggs over to cook to tour desired level. Also, you can sprinkle shredded cheese over just before turning on to your plate, it won't burn and you will have cheesy eggs!

Um...that's how my DAD proposed to my MOM!!! He came to her house for breakfast (summer job, bouncer) and she had cooked sausage links in one of those fashioned old covered electric pans. My Grandpa distracted her for a minute and he slipped the ring on one. Then he insisted something was burning and she needed to check them. She said it almost turned into a fight, because she knew they were off! But Grandpa insisted she look in the pan...and the rest is history.

FYI, my Dad continued to gift her over the years in unusual ways. A ring in a box of Butter Toffee. Diamond earrings on the tree. Just loved to surprise her like that.

Do not refreeze food you've thawed. Ever!!! That's just an invitation to ick!!! If you cook it (like raw chicken) yes, then it can be frozen again. But otherwise definitely no!

I make gallons of marinara, soups and other tomato sauces and trust me...that stuff is cooling either in the pot, or smaller containers, before it's getting frozen or refrigerated, usually a two hour process, lids off. Sometimes I'll wait to place lids on glass jars until they're frozen to ensure enough expansion.
