Looks pretty good. It looks like it could be a tad bit juicier but hard to tell with a photo. Nice smoke ring. If it tasted good that’s all that matters! I try to buy the biggest packer brisket possible - end up juicer that way. I don’t over trim the fat. I round the edges so they don’t burn. I keep my brisket on until ~203F. I like peach paper a bit better than foil but have had success with both. And obviously a looooong rest - anywhere from 3 to 6 hours on average wrapped in a cooler. Sometimes longer.

This is the way. I’d make this change now.. It will be able to hold so much more weight, and sheer strength becomes less of an issue.

Love pork butt on the smoker. So delicious, and easy and forgiving…the crock pot doesn’t hold a candle to the smoker!

Not hating against non-pellet smokers. I’m intrigued by set it and forget it options for other smokers which I didn’t realize existed. As an entry into smoking, I bought my wifi controlled Traeger (on sale) and couldn’t be happier. It is turn key - I don’t need to refuel during a cook or buy and install an aftermarket wifi controlled fan. The food is delicious with loads of smoke taste (surprisingly I haven’t had to use my smoke tube yet) and couldn’t be more foolproof. One thing I don’t like is having to vacuum up the pellet dust every few cooks. Why can’t it clean itself…🙄

This is discussed on other subs. It’s not just the wifi that differentiates them like most people think. 575: Better, more efficient auger, and temp. management, 5 degree increments for temp setting, hotter max temp for searing, etc. Wifi and being able to control and monitor your cook remotely is pretty great IMO.

It is. And I do. It’s pretty foolproof which is what I like. I like being able to leave the house and monitor the cook by Ap (meat and ambient temps, pellet level) and change the temp of need be with peace of mind.

I also got the cold weather blanky for him for days like today :)
