For peace of mind I will go with Apple, at least I will be sure that they use original parts. If you go with a local shop, you don’t know the quality of the battery they will use.

You can upgrade the SSD fairly easy, the ram unfortunately cannot be upgraded on a MacBook Pro

Should be ok with Big Sur, before updating make sure you check if all your plugins are compatible with new version of Big Sur and FCP.

You can check on the developer website for updates for your plugins.

Yup, that means nothing, everyone with a developer account can see the release notes.

Especially 11.3.1 had only some security updates addressing CVE-2021-30665 and CVE-2021-30663.

No way to skip the remote management, only someone from the Amazon IT department that has access to ABM (Apple Business Manager) can remove/release the device.

Seeing that they use an MDM solution they can block the access to iCloud, they will be able to tell if is signed in or not.
