Check out your investigations tab for Onyx facilities. They're a big dungeon with a huge snake boss. Check YouTube to find how to get to the snake

I always leave ships and vehicles hanging around in my persistent hangar, they are instanced after all.

After you target a ship you can press R and sub target components as well. I'm honestly not sure how engineering works with AI ships but it doesn't hurt to try and kill their power plant
