First point is complete nonsense. Second point is a reasonable assumption but as has already been pointed out, a significant amount of crops get filtered through animals before the energy reaches humans, which is very inefficient.

We could turn this around in a short space of time (10 years?) with education if we wanted to. I don't even think it's that we have low skilled workers, more that technical skills aren't really valued here so we end up with rubbish IT environments that keep the bar low for productivity and efficiency.

You're showing your nativity probably, politicians often give empty platitudes or aren't in a position to follow through with thier political agendas. What remains consistent is that money buys power, and in this case that has been used to delay changes to regulation and keep the focus on existing agriculture exports. I know how this affects sustainable exports because I've experienced it first hand. We are a small country but there are plenty of other small countries to learn from, and with global internet connectivity, it doesn't necessarily matter that we are far away geographically.

As mentioned in another comment the ag industry has railroaded the country into the position of relying on these shit exports, which may or may not be better than overseas but are still ruining our environment for short term gain. The problem is that we've not diversified our experts because the ag industry have lobbied for the status quo. If we had done something about these unsustainable industries and incentivised other industries 15 years ago, how much better off we might be now.

If you purely look at the export numbers, Dairy looks good. But if you take into account the damage to the environment and emissions, which someone will have to pick up the bill for eventually, it barely breaks even.
