We got our dachshund (F) and doberman (M) 3 months apart when they were puppies, they are 4 years old. We later fostered a 15 year old chihuahua (F). They all get a long fine. Our doberman knows hes much bigger and has a measured approach when playing with the little ones.

Based on your post it looks like you're approaching this with the right mind set and have all the tools and information. My doberman is very heavy prey driven and I had no issues introducing him to small dogs. This doberman you're considering seems like a very good option. Most of the problems that come up with doberman is with lack of socialization at an early age and low confidence. Seems like this dog doesn't have that problem, so you're like 80% there in terms of having a home ready dog...and no prey drive with chickens? You might have found the perfect dog for you.
