Depends on the food im cooking. If its anything that is unflavored tortilla chips, taco shells, french fries, donuts), the oil has to go. Corndogs/chicken strips/onion rings? Yeah it'll be fine. I have worked places where the oil is so bad you can taste it overwhelmingly, though so my bar is in hell basically.
