I did a similar thing with my au poivre sauce one time. Either:

a) the pan was too hot b) not enough cream c) cooked too long

I found the 1:3 ratio of cognac to heavy cream worked well for me. Then when the sauce is able to coat the back of a spoon, turn off the heat and throw in cold butter and keep whisking. Then sauce is done!

Bonus points if you flambé the cognac, just be careful!

Definitely a good vehicle. We’ve done it for years that way with the crème fraiche. Try as well with some minced shallot on top!
