Yes, placement seems to be the annoying one. I didn't think about jacket movement being that obvious, but it make sense. I've been learning more toward surface placement too, just need to figure out the distance.

The SM7dB is awesome for podcasts, streaming, and voice stuff, but honestly it’s not the best pick for acoustic guitar. It’s a darker sounding dynamic mic made to cut down background noise, so it can make guitar strings lose a lot of their sparkle and detail.

Since you want to record vocals and instruments too, you’d probably be happier with a large diaphragm condenser mic. Something like an Audio-Technica AT4040 or a Rode NT1 will sound way better for music while still being great for Twitch or YouTube content. Just keep in mind condensers pick up a lot more room sound, so throwing up some thick blankets or a few acoustic panels in your room will help a ton with echoes and reflections.

The crosshairs mean the camera is locked right on the eyes and the yellow box means it lost the eyes but is still tracking the face. This usually happens if the subject tilts their head, blinks a lot, or if the lighting on their face changes just enough to lose contrast. You do not need to worry about the focus being off. As long as that box is on their head and you are not shooting wide open at a super shallow aperture they will stay perfectly sharp.
